Happy Birthday Potatoes – Quick, Easy, Scrumptious Potatoes.


These lovely potatoes are great for sharing and a lot healthier than chips!
The recipe is courtesy of Jamie Oliver but we thought it would be good to give you a few tips on the recipe

You will need –
Red skinned potatoes
            Olive Oil
            4 Sprigs of Thyme / Rosemary
            Lemon Zest
            Half Bulb of Garlic
            
Process – Hints & Tips
Boil the potatoes in 2cm pieces
                HINT: Put plenty of salt in the water

Drain the potatoes
                TIP: Shake them about really well to release the starch
Place them in your favourite frying pan on high heat and add Olive oil
Add lemon zest
                HINT: If you like a zingy flavour add lots more and more lemon (but not too much)
Add 4 sprigs of FRESH thyme or rosemary
                TIP: You can use sprinkle but you won’t get as much flavour – still good though.
Add Salt & Pepper
                HINT: More Pepper than salt because far too much salt can really ruin the dish
Squash half bulb of garlic cloves and add them to the pan the more the better If you like garlic)
                TIP: If you really like garlic, add some garlic granules
Roughly squash everything in the pan down with a masher
                TIP: You can use a fork just enough to release the flavours
Toss all the ingredients together in the pan and cook until GOLDEN BROWN.
